About the Speakers

Karen Giles-Smith, MS, RD
Karen Giles-Smith serves as the manager of nutrition communications
for the United Dairy Industry of Michigan UDIM She is responsible for
coordinating programs that provide health professionals, the media and
consumers with current science-based information on the nutrition value and
health benefits of dairy foods She has appeared on PBS Detroits Get Up
Get Out Show, is a regular on WEYI-TVs NBC 25 Today morning news in Clio,
and has been interviewed by several major media outlets
Prior to joining UDIM, Karen was a clinical dietitian at William
Beaumont Hospital in Royal Oak She served as president of the LDA and
director of the Food Fitness 5K for two years and as a board member for
eight years Karen received the Michigan Dietitian of the Year Award from
the MDA in 2004

Betty Krauss, RD, CDE
Betty Krause is an RD with 30 years of progressive experience in
Clinical Dietetics and Nutrition Service Management Currently serving in a
rehabilitation setting where she is responsible for the nutritional care of
stroke, brain injury, spinal cord injury, and pediatric patients Betty is
also an active member of
the Interdisciplinary Dysphagia, Pediatric
Feeding, Quality Improvement and Customer Service teams During the past
15 years, she has acquired extensive experience Management experience
portrays efficiency in employee hiring, training, and evaluation;
departmental smooth operation budgeting and strategic goal planning
