| |large enough to hold fruit moisture |
| |Method |
| |Boil turkey in a large pot of water for approximately 2 hours |
| |you may add sage and garlic for additional flavor While |
| |turkey is boiling mash the apples, plums, spices and tequila |
| |and let set for one hour at room temperature Wrap fruit |
| |mixture in cheesecloth and tie the opening tightly After |
| |turkey has boiled for two hours, remove from pan and stuff the |
| |spice bag into the turkey cavity Wrap turkey in aluminum foil |
| |and place on the grill for about one hour or until done

| |Corn Bread Sausage Dressing |
| |RECIPE INGREDIENTS: |
| | 10 cups corn bread cubes 18 corn muffins should do |
| | 1 pound bulk pork sausage, sliced into 1/2-inch thick |
| |disks |
| | 2 cups chopped onion |
| | 2 ribs celery, finely chopped |
| | 1 red bell pepper, chopped |
| | 1 cup frozen corn kernels |
| | 3 to 3 1/2
cups chicken stock |
| | 1 1/2 teaspoons dried thyme |
| | 1 1/2 teaspoons ground sage |
| | 1/2 teaspoon dried rosemary |
| | 1/4 teaspoon salt |
| | 1/4 teaspoon ground black pepper |
| | 1/2 cup chopped fresh parsley |
| | 2 large eggs, lightly beaten |
| | |
| |Directions |
| | |
| |1 Spread the corn bread cubes on a baking sheet to partially |
| |dry at room temperature for 4 hours or up to overnight Then |
| |transfer them to a large mixing bowl |
| |
|
| |2 Brown the sausage in a large, heated skillet or sauté pan, |
| |breaking it up with a wooden spoon, until it is fully cooked |
| |With a slotted spoon, transfer the cooked sausage to a platter |
| |lined with paper towels Drain all but about 1 1/2 tablespoons |
| |of fat from the skillet Heat the oven to 350 degrees |
| | |
| |3 Add the onion, celery, and bell pepper to the pan and sauté |
| |over moderate heat for 7 minutes, stirring often Stir in the |
| |corn, 2 cups of the chicken stock, and the herbs, salt, and |
| |pepper Continue stirring until it comes to a simmer, then |
| |ladle it over the corn bread and toss well Add the reserved |
| |sausage and parsley and toss again |

| |4 Whisk together the eggs and 1 more cup
of chicken stock |
| |Drizzle the liquid over the dressing and toss well the |
| |dressing should be quite moist; if not, add more chicken |
| |broth Bake the dressing in a large, tightly covered casserole|
| |dish for about 30 minutes, until steaming hot throughout Makes|

| |Ingredients |

| |1 cup water |
| |1/4 cup sugar |
| |2 1/2 teaspoons ground cinnamon

| |1 teaspoon ground nutmeg |
| |1/4 teaspoon grated lemon zest |
| |4 teaspoons cornstarch |
| |1/8 cup water |
| |4 teaspoons sugar |
| |1 pound fresh apples, peeled, cored, sliced |
| |3 medium bananas, peeled and sliced into 1/4 inch rounds |
| |4 ounces pousse pieds or sea beans |

| |Cooking Instructions |
| | |
| |1 Preheat the oven to 375F
|
| | |
| |2 In a large pot, bring the water, sugar, cinnamon, nutmeg and|
| |lemon peel to a boil |
| | |
| |3 In a separate bowl, mix the cornstarch, water and sugar Add|
| |this mixture to the boiling liquid, stirring constantly until |
| |thoroughly heated |
| | |
| |4 Remove from heat and fold in the apples |
| | |
| |5 Place the apple mixture in a baking pan, cover with foil and|
| |bake for 20 minutes Stir the apples once or twice during |
| |cooking to keep the edges from burning |
| |
|
| |6 Add the banana slices and bake an additional 5 minutes |
| | |
| |7 Cut the puff pastry into 8 even portions of any shape |
| |desired Bake for 5 to 10 minutes or until golden brown |
| | |
| |8 Cut out shapes in the center of the pastries to make room |
| |for the apple mixture Pour the apples over the pastry shell |
| |and serve warm |

|gov |or diabetes, health care providers conduct a Fasting Plasma |
| |Glucose Test FPG or an Oral Glucose Tolerance Test OGTT |
| |Either test can be used to diagnose pre-diabetes or diabetes |
| |The American Diabetes Association recommends the FPG because it|
| |is easier, faster, and less expensive to perform |
| |With the FPG test, a fasting blood glucose level between 100 |
| |and 125 mg/dl signals pre-diabetes A person with a fasting |
| |blood glucose level of 126 mg/dl or higher has diabetes |
| |In the OGTT test, a persons blood glucose level is measured |
| |after a fast and two hours after drinking a glucose-rich |
| |beverage If
the two-hour blood glucose level is between 140 |
